dc.description.abstractAprovechando las bondades de la investigación cualitativa, a continuación se presentan las características de los consumidores de café gourmet en el municipio de Rionegro Antioquia; población que gracias a su 40% de componente extranjero, ha venido experimentando cambios en sus gustos y demandas. Para ello, los momentos metodológicos fueron la revisión de literatura, el diseño lógico, el diseño, aplicación y análisis de dos cuestionarios -para propietarios de cafeterías y habitantes desprevenidos de la ciudad-. Una vez realizado el trabajo de campo y analizada la información de la fuente primaria, se confirmó el elemento socializador del café; los mayores consumidores fueron la población mayor de 35 años, de los estratos tres y cuatro, con el sexo femenino como el más asiduo, aunque no por mucho -59%-; los consumidores de café en el municipio prefieren disfrutarlo en la mañana y en la noche, eligiendo la calidad sobre el precio y el aroma sobre el sabor y la apariencia. En cuanto al consumo, el 47% del nicho analizado, suele tomar una taza al día, siendo el capuchino el tipo de café gourmet más solicitado.spa
dc.description.abstractenglishUsing the benefits of qualitative research, we present below the characteristics of gourmet coffee consumers in the municipality of Rionegro Antioquia; a population that, thanks to its 40% foreign component, has been experiencing changes in their tastes and demands. For this, the methodological moments were the revision of literature, the logical design, the design, application and analysis of two questionnaires - for owners of coffee shops and unsuspecting inhabitants of the city. Once the field work was carried out and the information from the primary source was analyzed, the socializing element of coffee was confirmed; the biggest consumers were the population over 35 years old, from the third and fourth strata, with the female sex as the most assiduous, although not by much -59%-; coffee consumers in the municipality prefer to enjoy it in the morning and at night, choosing quality over price and aroma over taste and appearance. As for consumption, 47% of the analyzed niche, usually take a cup a day, being the cappuccino the most requested type of gourmet coffee.eng
