dc.description.abstract | La miel de abejas es un alimento rico en nutrientes y ha sido reconocida por sus múltiples beneficios terapéuticos. Los estudios comparativos de la calidad microbiológica y la actividad antimicrobiana entre abejas con aguijón y sin aguijón son limitados. En este estudio se realizó una identificación y cuantificación de azúcares, caracterización microbiológica y evaluación de la capacidad antimicrobiana de dos tipos de miel proveniente de dos especies de abeja: con aguijón Apis mellifera y sin aguijón Melipona ebúrnea sobre Salmonella typhimurium ATCC 14028, Listeria monocytogenes ATCC 19118 y Escherichia coli ATCC 25922, en seis fincas ubicadas en el Oriente Antioqueño. Se encontraron diferencias estadísticamente significativas en el contenido de fructosa entre las dos especies, pero no se presentaron diferencias para el contenido de glucosa. Las mieles presentaron buena calidad microbiológica y exhibieron capacidad antimicrobiana contra S. typhimurium y L. monocytogenes siendo esta última la de mayor inhibición, no obstante E. coli presentó resistencia. | es_ES |

Comparative studies of microbiological quality and antimicrobial activity between sting and non- sting bees are limited. In this study, an identification and quantification of sugars, microbiological characterization and evaluation of the antimicrobial capacity of two types of honey from two bee species: with sting Apis mellifera and without sting Melipona ebúrnea, were performed on Salmonella typhimurium ATCC 14028, Listeria monocytogenes ATCC 19118 and Escherichia coli ATCC 25922, in six farms located in Eastern Antioquia. Statistically significant differences in fructose content were found between the two species, but no differences were found for glucose content. The honey presented good microbiological quality and exhibited antimicrobial capacity against S. typhimurium and L. monocytogenes, the latter being the one with the greatest inhibition, however, E. coli showed resistance. | es_ES |
